RECIPE: Tropical Smoothie Cafe Inspired Kale Slaw


One of my favorite sandwiches to get from Tropical Smoothie cafe is their Rustic Turkey and Apple Club. I order mine sans cheese and bacon, and I think it tastes delicious and is full of flavor. I decided to try to make the sandwich myself because it's not wise for a college student to be eating out all that often. Though I don't know the exact recipe Tropical Smoothie makes, I have a feeling that there's is heavier on the mayonnaise and might use their turbinado sugar so I made some alterations.
I N G R E D I E N T S

  • 1 bunch of Kale
  • 2 Apples of your choice (I used fuji)
  • 1/4 cup of Olive Oil Mayonnaise (substitute for Veganaise for vegan alt.)
  • 1/2 cup of Dijon Mustard
  • 3 Tablespoons of Apple Cider Vinegar
  • 2 Tablespoons Agave Nectar
  • 1/2 Tablespoon Garlic Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Tablespoon Celery Seed

D I R E C T I O N S


  1. Wash produce and dry
  2. Tear the leaves off of the kale to remove the stem and use kitchen shears to cut them into tiny pieces
  3. Using a grater or knife, julienne your apples
  4. Place prepared kale and apples into a large bowl and add in the rest of the ingredients.
  5. Mix everything together (it's easier if you just use clean hands) until well combined
Serve alone, as a side, or on a sandwich! If you manage to have leftovers, store them in an airtight container in the refrigerator. 

This slaw is 10x better than your average coleslaw because it is low in sugar and packed with the amazing benefits of kale that will nourish your body!

RECIPE: Healthy Banana Chocolate Chip Muffins



It was 10:15 pm and I was so hungry- I was tempted to reheat some frozen cinnamon rolls my mom made for me. As I was walking to the fridge I noticed that my bananas were brown and I immediately thought about making banana nice-cream...only to remember that my Nutri bullet is in the hospital (aka I sent it home to see if my mom can fix it for me because it is broken yet again). I was craving my favorite combination of banana+chocolate+nuts so I decided to make muffins. Our of all of my wonky healthy creations, I have to say that this recipe is one of my favorites only because it tastes identical to a "regular" banana chocolate chip muffin. However, other muffins will get you at around 400 calories and are extremely high in carbohydrates and sugars. My muffins are around 160 calories and are packed with nutrient-rich ingredients (hello fiber, potassium, iron, and protein!) Oh, they are also naturally gluten-free and refined sugar-free. I made a batch yesterday and my boyfriend and I devoured them. I consider these muffins healthy but keep in mind that moderation is also important when consuming anything! Make a bunch of these ahead, and store them in an airtight container to have a delicious grab and go treat for the week!

This recipe will make 12 muffins in a 3x4 muffin/cupcake pan.

Ingredients:
- 2 Ripe Bananas (The riper the better because you won't have to use as much sweetener!)
- 1 Cup Almond Butter (or any nut butter of your choice)
- 2 Eggs (substitute with flaxseed "egg" for vegan alt.)
- 1 Cup Semi-Sweet Chocolate Chips (substitute with dairy free chocolate chips for vegan alt.)
- 1/2 Tbs. Baking Soda
- 1 Tbs. Apple Cider Vinegar
- 3 Scoops of Vanilla Flavored Protein Powder (Optional. I used Protein World's Slender Blender Vanilla)
- Pinch of Pink Himalayan Salt
- Dash of Cinnamon

Directions:
1. Preheat your oven to 400 degrees F
2. Mash the bananas in a large bowl until smooth (slight chunks are ok)
3. In a separate bowl, crack 2 eggs and whisk. Pour beaten eggs into the bowl with the bananas
4. Add almond butter to the bowl and dash in the salt, baking soda, and cinnamon. Stir until incorporated
5. Add in the apple cider vinegar and stir again
6. If you are using protein powder, coat your chocolate chips in the powder to help prevent them from sinking to the bottom. If not, just add the chocolate chips in.
7. Stir everything to ensure that it is all incorporated well and ladle into your lined muffin/cupcake tin!
8. Bake in the oven for 20 minutes or until they are golden brown and fully cooked on the inside.

To be frank, I didn't have the heart to delete it because I was proud of recruiting over 200,000 viewers to see products I was purchasing and reviewing, and beauty advice I was giving. I have been wanting to share my journey as an undergraduate pre-medical student and love for beauty, fashion, and health on that blog, but didn't feel inspired to write on the platform I created so long ago. I felt like I have evolved as a person dramatically during my high school to college transition. So, I decided to create a new blog which I am very excited about because I am hoping that my content can inspire someone to study harder, eat cleaner, or try a new skincare regimen.
